Hi there! Is everyone excited for an abbreviated workweek? You know I don’t like Tuesdays, but since I have a very short week this week, I can handle it 🙂
Yesterday was such a great, lazy day. I love days that have absolutely nothing on the agenda. No “have to’s” of any kind. This weekend I slept 9 – 10 hours each night and it was glorious. I guess my body needed to catch up on some sleep!
I spent about an hour at the pool yesterday. Jesus Christ – it was 100 degrees outside! That’s a little too hot for me. I also limited my time both pool days because I know being in the sun isn’t the best. But, gooosh, I love having a tan!
Post-pool I came back and whipped up a smoothie in no time 🙂
My spinach stash had gone bad, so this was a regular old smoothie (please note my extremely precise measurements):
- Just enough skim milk to get everything movin’
- A handful of ice cubes
- A dollop of blueberry Chobani
- 1 1/2 tbsp PB
- 1 banana
- 1 frozen strawberry
It was tasty, and even though you cannot taste the spinach, I missed it!
Two for two
I made a smoothie, and Cory made a baguette from scratch. No big deal.
He’s never made bread. He just felt like giving it a try. It turned out so well! I even snagged a huge chunk to eat at lunch today 🙂
Cory was actually 2 for 2 in the kitchen yesterday. We had a little cookout and he made the best burgers I have ever tasted in my entire life. Truly, they were out of this world. How lucky am I? Seriously.
Gross picture, I know. But this was the only one I took. The food was hot and ready to be eaten, so I really didn’t take the time to try and be creative. You forgive me, right? 😉
(PS – We didn’t have any butter for the corn, so I sprinkled some parmesan cheese on the cob and it was quite a nice substitute!)
Cory moves into our new place in less than a month (!!), so he spent a good chunk of time cleaning out his closet. Look at all this stuff he’s sending to Goodwill!
A good amount of t-shirts were Longwood related, and it was kind of sad to see them placed into the give away pile. I would see a shirt and think “You wore that on such-and-such date.” It was strange!
Remember how I said I’ve been getting 9 – 10 hours of sleep for the past few days? Yeah. Well, when my alarm went off at the ass-crack of dawn, I didn’t budge. An afternoon workout is in my future.
I am running so low on food right now! Like I said, it’s a short week for me because I’m traveling this weekend, so I’m trying to avoid buying food that will go bad. That said, I went to the grocery store at 6 AM to buy juuust enough to get me through the next three days 🙂
Thank goodness I made the decision to go to the store – how would I have been able to enjoy my beloved cereal combo without milk?!
Well, my friends – that’s the story so far! I’m off to make the bacon 🙂 I’ll catch you guys later!

I think we were pretty split down the middle about who indulges over the weekend and who doesn’t.
My last post made me seem like I’m a trash-food vacuum Friday – Sunday. I realized after the fact that that probably wasn’t the best “healthy living blogger” thing for me to share, but I was just trying to highlight the fact that, to me, not being afraid of foods is a huge part of the definition of “healthy living.”
No matter if and when you indulge, I hope you enjoy it every time! 🙂
I woke up this morning with a sinus headache (anyone else feelin’ the allergies lately?) so I stayed in bed with every intention of an afternoon workout with Cory. I was super pumped because we don’t normally workout together, and I was more than ready to embrace the change of pace.
But when we got to the gym (at his apartment complex) there were 6 people lifting weights, which meant no room for us. Not to be defeated, we decided to go for a long walk and chat about our days.
10 minutes into the walk I was a sneezing, coughing, watery-eyed mess. Ugh.
Allergies: 1, Colleen: 0
Tomorrow is a new day, yes?
Although I spent the rest of the afternoon resisting the urge to scratch my face off, I really do appreciate the nice weather. Life is so much nicer when the sun is shining 🙂
And what better way to embrace summer weather than to have one of my favorite sandwiches for dinner?
So, so good. Even though I can’t smell much, this baby tasted heavenly. This is the kind of sandwich that I want to make the “last” bite last as long as possible. I never want it to end! 🙂
I’m not quite sure what the rest of the evening holds, but whatever it is, I’m pretty confident it’s going to be relaxing! I hope you’re able to do the same!

Forget it. Hey. Howya been?
I spent the afternoon just lounging around. I even got to lay out for about an hour, which was fabulous. The sunny weather was just beckoning me to lay outside and soak it all up 😉
The only semi-issue is that the pool doesn’t open until next weekend.
And I don’t have a back yard.
So I grabbed a blanket and hoofed it over to the lake across the street to set up shop. I felt so exposed, although there was really no one else around. It feels so weird to be in a bathing suit
in general when it’s sort of out of context – i.e. a grassy field where families take their fully clothed children to chase geese.
Cory and I made our way over to Wegman’s this afternoon. Has anyone else ever been there? Holy cannoli! That place is so busy – but I love it! I also enjoy it because it’s like a less-snooty (I said it) Whole Foods.
We bought some kale because a) it’s such a power-house of a food and b) Cory had the fun idea to make kale chips.
The attempt for making the kale chips was a disappointing one. We cut and ripped just like the internet instructed.
Then we tossed them in olive oil and salt before we put them in the oven to bake at 400 for 10 minutes – but they were a sad sight upon completion. They tasted like salty air. I’ll spare you the photo graphs.
My redemption came in the form of stuffed peppers for dinner.
Despite the burnt appearance, these were actually good! I ended up making mashed cauliflower as a side, and they should receive an honorable mention. For a food that attempts to fill the shoes of the Almighty Mashed Potato, they do an alright job.
Now that we have full bellies and a clean kitchen, it looks like I have some time to catch up on some of my favorite shows 🙂 Does anyone else love Hulu as much as I do?

Mine was fantastic. It was filled with family, relaxation and a whole lotta food. It was wonderful! I think it’s perfectly acceptable to loosen the belt buckle and throw caution to the wind every now and then and just enjoy food. And that’s exactly what happened this weekend 😉
Don’t mind me. I’m a 23-year-old who still enjoys coloring eggs…
I’m also a 23-year-old who still gets excited about an Easter basket! 🙂

Let me tell you something. Cory’s mom is the Hostess with the Mostest. She is the Detail Queen and I love it! I mean seriously. Look at the table settings she created.

And the food was fabulous. I pulled the I’ll try a little bit of everything that’s on the table card.
Looking at this picture, I realize that this serving makes me seems quite anal. I’m swear I’m not a 5-year-old. I really don’t mind if my foods touch 😉
I also went to town on desserts. But let me just highlight my favorite. Enter: a ball of red velvet cake that was rolled in cheesecake, that was then rolled in graham cracker crumbs, that was then dipped in white chocolate. Heaven on a stick? I think so.
I’m certain I will be dreaming of these.
Cory didn’t want to keep a lot of the candy in our Easter basket, so guess who it came home with? This girl. Who has sticky fingers around sweets. I have to take precautionary measures when left alone with bags of candy.
I measure out serving sizes and put them in separate baggies so when I do want a little treat, I can grab and go.
Otherwise I will devour an entire bag of Starburst jellybeans in one sitting. And then I’ll try to convince myself that because they’re so tiny, they can’t possibly have any substantial caloric impact…

Hi friends! How’s the transition from weekend to work week going for everyone? These past few days have been full of exciting things, so I’m still running around with my head in the clouds 🙂
If you happened to miss yesterday’s post, you didn’t hear my fantastic news! We are so excited. We may or may not have walked around Home Goods last night just “looking for inspiration.” Does anyone else love Home Goods as much as I do??
Cory and I tried spaghetti squash for the first time last night. This stuff is so freakin’ cool – have you tried it before? (Cory picked up this squash at Whole Foods.) All we had to do was cut it in half, place it on a baking sheet (cut side down) and place in the oven at 350 for 45 minutes
When you pull it out of the oven, flip it over, grab two forks and start shredding
I was so amazed by how a huge squash went from that, to this
My “spaghetti” sauce was from a jar, and I added meat, broccoli, onion, red peppers and mushrooms. And you know what? This dish was pretty close to tasting like actual spaghetti! I was skeptical at first, as I’m a huge carb fiend. I love pasta, but I don’t eat it often because I tend to overload. Needless to say, this is a great option if you inhale carbs on a meal-ly basis like I do.
Now if only I could create a fake-me-out baguette to go with this meal 😉
Monday’s Moves & Morning Meal
This morning at the gym was just what I needed. I completed a 4.5 mile run in 40 minutes with the help of the fantastic 5-4-3-2-1 pace. If you haven’t tried out this treadmill workout, I suggest you change that 😉
Another exciting thing for me was this morning’s breakfast. Believe it or not, I’ve never had a green monster before! I read about them on almost every blog that I follow, so I figured it was time I gave it a try. Again, I was a Doubting Thomas. Can you really not taste the spinach?
In this smoothie went
- 8 ice cubes
- 3/4 skim milk
- 1 banana
- 1 huge handful of spinach
- 1 frozen strawberry
- 1 scoop of Arbonne Essentials Vanilla protein shake mix (I think this made the smoothie. SO good!)
I’m spending today with my mom to run some important wedding errands! 😀 As excited as I am, I can’t forget that I have this waiting for me when I get back

Good morning, beauties! Thanks to all of you who giggled at my Break Up post. Clearly, Running and I have a hot-and-cold relationship, but I know it’s impossible to leave forever. I’ll be trotting along and wheezing again in no time 🙂
Yesterday was busy for me – it was 8:30 when I got home, I kept getting sidetracked and blogging didn’t happen! I woke up bright and early for some Legs & Back action with the P90X gang. My work day was rather dull, but my lunch totally made up for it.
I also made a little pit-stop at Target and picked up a new purse (and tried on a million cute dresses) Seriously, it’s impossible to walk into that store and leave empty handed.
Obviously I will not be wearing this purse across my chest and holding it’s little handles at the same time – I simply wanted to showcase it’s stunning versatility. Just wanted to clear the air on that one 😉
The rest of my day was splendid because I spent it with my parents 🙂 My dad was amazing and came and switched cars with me while I was at work and he went to get my inspection done. That saved me a lot of time! He da best. My mom also found her mother-of-the-bride dress. She looked beautiful!
My parents took me out to dinner at this fabulous restaurant in Old Town called Overwood. My mom and I have concluded that it is impossible to order a bad meal from that place.
I ordered 1/2 a roasted chicken with red skinned mashed potatoes (hiding under the chicken!) and brussel sprouts.
Would you believe that this was the first time in my life that I’d ever eaten brussel sprouts?! I see them all over my favorite blogs and I’ve been itching to try them. I wasn’t disappointed!
I was stuffed by this meal, but I wasn’t feeling too guilty about anything. I was ready to get the check and go. Then the waitress uttered the d-word: dessert. We rarely get dessert when we eat out. My mom does not eat sweets of any kind. Ever. It’s insane. My dad on the other hand said, “Sure! Let’s look at the options.” Damn it, Dad. How am I supposed to say no to this?
I slept in today because I’m planning on getting a workout in before class tonight.
I made myself a big bowl of cereal and it absolutely hit the spot.

Did you have any problems with WordPress last night? I did! I was super annoyed because a) wanted to post and b) I normally do a little blog work before bed to prep my morning post. Grr.
But here’s what I was going to share last night
Cory and I went to the dining hall for dinner. I fought the urge to eat cereal as my meal 😉 I had some chicken (sans skin) with some rice and half a bread stick (they serve bread sticks in halves. Strange.)
Cory took full advantage of our dining experience. He sampled a bit of everything. A hot dog, fries, mashed potatoes, broccoli and cheese..he was lovin’ it. He can eat like that and not gain any weight. I wish. How can guys do that?!
I did cave, though. I swear the soft serve and rainbow sprinkles were eyeing me from across the room all through dinner. I even tried to plan ahead – I grabbed an orange to serve as my “dessert” but that seemed pathetic when I set my eyes on the Edy’s machine. All bets were off 😉
The rest of the night was spent curled up watching TV and being absolutely lazy. I liked every minute of it.
This morning I had a date with the gym, but I stood him up. I hope he forgives me this afternoon 🙂
I’ve had sinus head aches the past two days. I think the lovely spring weather is to blame. Does anyone else get allergy/sinus head aches when spring rolls around? I’m popping Ibuprofen like Skittles, but it’s not cuttin’ it for me.
Well, friends – I’ll off to work! My RA class is giving presentations today. I’m looking forward to hearing them/not needing to prepare anything for class.

Cory and I met up with my BFF, Jamie at McCormick & Schmick’s because they have one of the most killer happy hours ever. Drinks are on special, and they practically give away food!

Jamie and Cory teased me because I wasn’t feelin’ the bar food, (even though I loved the prices and heavily sampled our non-pictured spinach dip). So what if I packed my own happy hour snacks? Judge me.
You can bet your green buns I was the only person at the bar eating an apple. Whatevs.
Cory sometimes feels lost in the conversation with Jamie and I, so this time he came prepared to entertain himself. Enter: The one-man Apple store
Why, yes. He is using artificial sweeteners to prop up his iPhone – just in case he got a call while playing with his new iPad 😉 I kid – he really wasn’t antisocial. I just couldn’t pass up this photo-worthy moment.
After we left the bar, we went and visited two of my closest friends: Ben & Jerry.

It was so nice outside that we walked around for a little bit before going home. I guess you could say it was a pretty perfect St. Patrick’s Day!
It looks like most of us absolutely hate the dentist! I’m glad I’m not alone on this one 🙂 While the sound of metal tools scraping my teeth and the offensive “dentist aftertaste” were in full swing this afternoon, I actually ended up complimenting my dental hygienist. She didn’t ask me any questions while she was working and she was super fast. Done and done!
Pre-dentist I made a trip to Target (!!!) and a bought cute sundress (it will be making an appearance this weekend) and a pair of sunglasses. I’m so not a sun glasses snob. $16.99? Works for me! If I bought an expensive pair, I know I’d sit on them within the first week. Story of my life. Do you splurge on sun glasses?
Before heading out, I made sure to pack some snacks to keep my hanger at bay 😉
Some H20, a Fuji apple (I am an apple snob. Fuji all the way), some Kashi crackers and a Cinnamon Raisin Gnu Bar. I can’t lose with these things! They’re all so good! You have a couple more hours before I pick a winner for my Gnu Bar GIveaway!
Okay – so for dinner Cory, my Dad and I went to Hard Times Cafe for some excellent chili. Ever since my dad suggested this place on Monday, I had corn bread and chili on the brain.
The menu has several chilies to choose from, so they give each table a little sampler to share. It’s so helpful! (My apologies for the orange-y photos. The lighting was terrible.)
This picture makes them look so gross! But they were all SO tasty. I went with the Terlingua Red Chili and it was on point.
I think the phenomenal corn bread deserves it’s own close up 😉
So the chili was great, but only minutes after eating only a few bites, I knew I made a mistake. I’ve mentioned before that I have Crohn’s, so I am no stranger to tummy troubles. I know there are certain foods that I should avoid (like, say…chili!) but sometimes I can’t help myself.
So my question is, are there any foods that make you feel yucky after eating them – but sometimes you eat them anyway and just accept the fact that you’ll have to deal with the consequences?
As you can imagine, I’m feeling a little less-than-stellar, so I’m going to call it a night! I hope you are having a relaxing evening, friends!
