I mean, what better reason to start drinking at 4:30 in the afternoon? 😉
Cory and I met up with my BFF, Jamie at McCormick & Schmick’s because they have one of the most killer happy hours ever. Drinks are on special, and they practically give away food!

Jamie and Cory teased me because I wasn’t feelin’ the bar food, (even though I loved the prices and heavily sampled our non-pictured spinach dip). So what if I packed my own happy hour snacks? Judge me.
You can bet your green buns I was the only person at the bar eating an apple. Whatevs.
Cory sometimes feels lost in the conversation with Jamie and I, so this time he came prepared to entertain himself. Enter: The one-man Apple store
Why, yes. He is using artificial sweeteners to prop up his iPhone – just in case he got a call while playing with his new iPad 😉 I kid – he really wasn’t antisocial. I just couldn’t pass up this photo-worthy moment.
After we left the bar, we went and visited two of my closest friends: Ben & Jerry.

It was so nice outside that we walked around for a little bit before going home. I guess you could say it was a pretty perfect St. Patrick’s Day!

My weekend has been pretty busy and I feel like I’ve been slacking on the blogging duties, so I just wanted to give you a little recap 🙂
Let’s start on Friday, shall we?
I mentioned that I had tacos on Friday, but I had forgotten my camera and M & D’s! I lurve tacos.
I topped a whole wheat wrap with refried beans (my weakness), ground beef, lettuce, onions, green pepper, salsa and cheese.
It was tasty 😀
As you know, the bulk of my Saturday was spent inside the classroom, but I did manage to have a fun night! My cousin Mandy turned 21 – so we celebrated with family, food and fun!
The majority of my evening was spent hovering over one of three areas :
1. The snack table. Notice the dip in the back left. I’m pretty sure that was all me 😉
2. This fantastic dip made by my aunt Cindy. I lose all will-power around chips and dip. It’s a concern.
3. The bar. Can we say “I love Cosmos” ?? 🙂

Where did I find myself towards the end of the night? Spending time with my two of my favorite things: A cocktail and a cupcake. My uncles kept teasing me about stuffing my face all evening and having this blog. But, true to my word, I put all out there 😉
This morning I woke up early (shocking) and made myself breakfast before working out.
One egg, one egg white and two pieces of wheat toast with blackberry jelly. YUM! Eating before working out makes a difference. I had more energy compared to working out first thing in the morning with no breakfast. But there’s no way I’m waking up at 4 AM for that. Sorry, Charlie!
I ended up running 3.5 miles this morning and I felt great!

My boss came in to my office this morning and handed me a cute little Valentine’s treat and I indulged almost immediately 😉

I survived my first stint of co-instructordom! 🙂 I didn’t say anything extremely stupid, I didn’t embarrass myself (like the time I got white board marker on my face in front of the class and didn’t realize it), and they even laughed at my jokes. So far, so good.
I am now rewarding myself with a fine Jolly Rancher and a delicious cup of tea – with a little bit of honey.

So we’ve all heard of the Special K Diet. I tried it for a day in high school, but I got so hungry that I almost ate my arm off. I love Special K, but not for two meals a day.
This afternoon, I made a tasty Special K snack – with a twist 😉
~ 3/4 cup of Special K with white chocolate chips sprinkled on top. I’m thinking this won’t help me lose 6 pounds in 2 weeks – but it sure was tasty 😉
