Hey there, blog lovers! Hows your Tuesday going?! It’s a little doom and gloom outside this morning, but I’m trying my hardest to send the sun some good vibes so he comes out to play 🙂
This morning’s workout started off with a a great strength circuit and then 2.5 miles on the treadmill. I was really glad that I was able to fit weights and cardio into one workout. I haven’t had time in the morning to that for a while now!
It’s also been several days since I’ve had a bowl of cold oats, so that’s what I let my mind wander to while I was hurtin’ fo’ certain on the treadmill.
These are not overnight oats. They’re more like stuck-in-the-fridge-while-I-showered oats. Nonetheless, they tasted great!
I’m a little preoccupied this morning because I have an interview in a few hours. I sweat peeling an orange, so you can imagine what a hot mess I am before an interview.
Like my nerves for anything, it’s the anticipation that kills me. Once I get in the room, I’m able to strut my stuff.
Okay, my friends! I need to spend some time going over the job description and potential questions before I hit the road. I need to convince this lady of how awesome I am 😉

Let’s chat – Are you calm under pressure, or are you a nervous nelly? A cardio workout vs strength workout? Strength workouts are my favorite!
Technically, Farmville is in between Richmond and Lynchburg. But, I get lost in the shower, so that’s all the geography you’re gettin’ outta me.
More importantly, Farmville, VA is where my best friend is. She, along with many of my favorite sorority sisters are celebrating Senior Week – a week long party that ends on Saturday with graduation.
Graduations are so boring.
So, I’m going to the party 🙂
Farmville, VA is the home of my alma mater and I love that place with my whole being. It’s where I became the person I am today. Where I met my future husband. Where I met my best friend and future bridesmaids. It’s where I was able to grow out of my shell and say Oh hey, world. Here I am.
It’s also the place of
many a few drunken nights, many conversations that resulted in laughing so hard that I peed a little 😉 It was the place that had room for me to figure out some of life’s trials and errors. It’s the place that I called home for four years of my life.
Well friends, I’m going back home and I’m terribly excited.

Why, hello there! I have a break between work and volunteering (which both take place on the other side of the world) so I decided to stop by my parent’s and make a quiche for my dinner tonight and breakfast tomorrow 🙂
I love recipes that can be eaten at more than one meal.
I also love recipes that wildly simple to make.
Quiches fill both of those requirements.
How to make a veggie quiche
1. Start by cutting up veggies of your choice and putting ’em in a bowl. I used a red pepper, a green pepper, two big mushrooms, and a 1/4 of an onion.
2. Transfer said veggies to a round pan – I used a cake pan.
3. In a separate bowl, beat 6 eggs, 1 tablespoon of milk and one tablespoon of orange juice. Once that’s all mixed up, pour eggs over the veggies (top with shredded cheese if desired)
4. Bake at 375 for 25 – 30 minutes.
Enjoy it for any meal! 😀

Happy Saturday, gorgeous gals and guys! I’m in class all day again, but I’m really looking forward to our guest speaker today. We’re having a transgender woman come into class, and I think it’s going to be extremely interesting and informational.
Cory, his roommate Bobby, our friend Dustin and I went out to dinner last night at District Taco. District Taco started out as a food truck in the District, but it became so popular that the owner opened a restaurant. If you live in the NOVA area, I suggest visiting real soon! It was fabulous!
The salsa bar was so fresh – I may have visited it twice 😉
Their guac was out of this world, my friends! Cory and I demolished this whole thing. It reminded me of a Gotta Have It size from Cold Stone 😉
Per the usual, I ordered two soft chicken tacos. The chicken was grilled, and the taco was topped with cheese, lettuce and grilled veggies. Gah, I love Mexican food.
Once in a solid taco-coma, we made our way to Cory’s to do more research on where we’re going to live come August. We’re starting to narrow it down to a few places we want to go look at 😀 I know I sound like a broken record, but this is whole getting married/moving in together thing is SO exciting!
Enough wedding talk. For something fun and out of the ordinary, Cory and I are starting to read a book together. I’m the delegated page turner 😉
No, the Apple-fanatic is going to read it on his iPad, while I went to the archaic library (just kidding, Cait!) to borrow the book.
I have heard so many people rave about this book. We’re both really looking forward to reading it 🙂 We just don’t know how to decide where each stopping point should be. Has anyone ever read a book with someone else or been in a book club?
